This is my second year in a row doing Whole 30 for January. While it can seem super-restricting and daunting at first, I love that it helps me kick my sugar addiction and pushes me to get back on track with healthy eating after the holidays. I also love that when it comes to cooking, having limited ingredients available to me forces me outside of my comfort zone, and inspires me to try new recipes. Some of these recipes I’ve loved so much that I know they’ll end up in my usual rotation, even after I’m done with this month.
{Breakfast}
Banana Chia Pudding: If you’re an overnight oats gal, this is a great alternative. It’s just a few ingredients, and the chia seeds help keep you full until lunch. It’s also really easy to make a big batch of this to keep in the fridge all week.
Sweet Potato, Egg, Avocado Bowl: I can’t get over how delicious this combination is. So simple, and so good. I may or may not have had this 3 times in the last week. (I have.)
Apples with warm almond butter: A grown up version of my favorite childhood snack! I like to heat up the almond butter and stir in some cinnamon. It’s filling, and easy to pack if you prefer to eat your breakfast on-the-go.
{Lunch}
Ground Turkey Taco Bowls: I made this recipe for lunch this week and it is delicious. I’ve been a fan of cauliflower rice for a while, but the seasonings in this recipe bring it to the next level.
Sweet Potato Broccoli Chicken Bake: There’s nothing better than a one-pan recipe. This one combines some of my favorite veggies and made meal-prep (and clean up) a breeze.
Fiesta Chicken Salad: This is a top contender for next week’s lunch. It looks like it will have the flavor and creamy texture that makes chicken salad so good…without the dairy.
{Dinner}

Zoodles with Turkey Meatballs: This is a healthy twist on a hearty and comforting staple. The meatballs were surprisingly simple to put together, and went very quickly.
Farmer’s Market Chicken Soup: I love a good slow-cooker recipe. There’s something so satisfying about coming home at the end of the day to a fully-cooked, hot meal ready to go.
Jerk Chicken with Mango Avocado Salsa: This is on the menu for dinner this week and I am so excited. I made a similar dish last year and loved it. The combination of jalepeño with mango is so delicious.
