Happy Memorial Day, loves! We finally got some heat this weekend in Seattle, so it’s officially starting to feel like summer. This means its time to bring our shorts and sandals out of storage…and freshen up our bar carts.
I have a feeling that this cocktail will be on regular rotation the next few months. It’s simple to prepare, fresh, and can easily be packed up to bring along to the beach, a picnic, or a backyard BBQ.
(Serves 4 or makes a small pitcher)
- 1 cup diced strawberries
- 12-14 mint leaves
- 4 teaspoons simple syrup
- 4 ounces fresh lime juice
- 4 ounces white rum
- 1 bottle of champagne
- Muddle the strawberries, mint, simple sugar and lime juice.
- Stir in rum and champagne.
- Serve over ice & garnish with extra strawberries and mint leaves.
