I’ve lived in Seattle for nearly 7 years now and I am still discovering new, amazing restaurants every weekend. One of the main things I’m on the lookout for? A beautiful brunch spread. What’s better than waking up slowly on a Sunday morning and indulging in the best of breakfast and lunch? Not much. To continue my hunt for the best of brunch, Dylan and I ventured to Eques, located in the Bellevue collection. They recently revamped their brunch menu, and let me tell you, it does not disappoint.
They have one of the most incredible buffets I have ever seen – complete with an omelette bar, a make your own bloody mary station, and a full spread of pastries from Macrina Bakery. The brunch menu was loaded with delicious options built around locally-sourced ingredients. They also had a the most amazing waffles I’ve ever heard of. Dylan ordered a white chocolate matcha waffle… I think it was reason enough to make a trip to the restaurant on its own.
With such a long list of restaurants I want to try in Seattle, I rarely visit the same spot twice. So, it’s saying something when I plan a return trip. But Eques is on that short list of restaurants to return to. It’s just that good. So if you go, let me know! We need to talk about the waffles.
